Eat This!!Broken Heart Brownies (he may not be good for you, but these are!)

Just  you got because  you fell for a really nice guy and got your heart stomped AGAIN is no reason to go running to the nearest bakery or Betty Crocker box in your cabinet. While I can confirm that eating your feelings and filling that big

hole in your heart and lets face it your ego with chocolate can make everything magically disappear for a while, you will only feel worse when you decide to jump back into the dating ring and step on that scale and your 10 pounds heavier. And who knows you could just be over reacting..maybe you read the whole situation wrong and he is going to call you later when he has a chance to process how insensitive he was. And then where will you be? …you will be fat and have completely blown your diet you have been working so hard on since the New Year. Then again  maybe he wont call..either  way you need to make sure that if he doesn’t call that you aren’t alone buried beneath a mountain of pastries.

So this week we are making BROWNIES…but these brownies are actually good for you!! This recipe is a one bowl recipe and with a couple extra steps you can save yourself from some massive guilt !! I got the  idea from a recipe in the book “The OVERNIGHT DIET” which I have been on since October. In the book however it calls for an instant box mix…and well we wont be doing that. But my brownie recipe is extremely easy and chances are you have everything you need in your cabinets. But your are going to be pureeing a bag of carrots and adding 3 cups of chopped cooked spinach as well as some chopped walnuts. I know it sound a little weird ..but its not and they taste amazing. So stop starring at your phone go pre-heat your oven to 350* and lets make a  fudgey chocolate (yet super healthy)Band-Aid over your little wounded heart…

    • 1/2 cup extra virgin olive oil
    • 1 1/4 cups (250 g) granulated sugar
    • 3/4 cup  unsweetened extra dark cocoa
    • 1/4  teaspoon salt
    • 1 teaspoon vanilla extract
    • 2 large eggs, cold
    • 1 cup 
    • whole wheat flour
    • 1/4 cup unsweetened applesauce
    • 2 cups thawed frozen chopped spinach
    • 2 cups pureed carrots
    • ¼ cup chopped walnuts
    • Oil spray for baking
    Pre heat oven to 350* Blend everything in a food processor. Spray long rectangle pan (9x13) with baking spray. Pour in mixture and bake for 25-35 minutes.(check with knife to make sure it comes up clean) Let cool. Makes 12 large brownies!!
