Eat This! Tribute to my sister Lemon Pepper Chicken!

This week’s recipe is dedicated to my little sister Jill who passed away last Saturday. One of the funniest stories I ever heard from my sisters daughter's father was about the first meal she ever cooked him. They had just moved in together . One of Eddie’s favorite dishes when he and Jill were dating was this lemon pepper dish they used to get at their favorite Italian restaurant. So Jill had told him their first night in their apartment together she was going to cook him the most amazing Lemon Pepper Chicken he had ever had with all the fixins’. He was so excited he said he didn’t eat anything that day !

Later that evening he came home and dressed for dinner sat down at the table waiting for that spectacular lemon chicken…Jill came over to the table and there on his plate a baked potato salad and plain grilled piece of chicken. When he asked “what happened to the lemon chicken” she replied “oh yeah” and grabbed a bottle of the Mrs. Dash Lemon Pepper seasoning sprinkled it on the chicken and said “ bon appetite! “ When ever Eddie tells that story I literally cry laughing because that was so Jill. Jill definitely inherited the Irish taste buds…she liked her fish , roast chicken , baked potato’s plain plain plain… So this week I’m going to give you an easy version of lemon pepper chicken in honor of my Jill E Bear I miss so much! Enjoy...

1 lb Chicken cutlets

1 tbsp flour

2 tbsp butter

½ lemon sliced into rings

1 tsp ground Black pepper

Sea salt

Mix the flour and black pepper . Lightly coat the chicken. In a frying pan melt butter over med high heat add the chicken.  Till just brown on both sides then add the sliced lemons and sea salt to taste reduce the heat and sauté for another 3-4 minutes . Serve and enjoy.
