Eat This! I feel like Italian ..Traditional Bolognese

So like me you are probably gearing up for next week’s Thanksgiving feast. It’s also going to be freezing cold this weekend.  I thought a nice traditional Italian Bolognese would be appropriate. Its hearty ,complex and should take the edge off the chill this weekend.

Once again this is something that is pretty much made in one pot.  Bolognese is basically a meat sauce or a “ragu”. It starts with your “ holy trinity” or “soffritto” of diced carrots celery and onions as the base and then you build in the flavors with bacon ,mushrooms , a mix of meats(I prefer to use a  beef, veal, pork  mix. You can typically find that particular meat mix already made up for you at the meat counter…it would called a “meatball mix”) then you finish building up your sauce with some stock, wine, seasonings and finally the ground tomatoes.

This sauce has no business going on spaghetti or angel hair pastas. Its best to dress a “tagilatelle” pasta or a nice broad noodle like “fettuccini”  something that can stand up to the thickness of the sauce. So bust out a nice crusty french bread , some wine and your favorite fresh pasta and Enjoy!

1 tbsp olive oil

1 onion diced

1 celery stalk diced

1 carrot shredded

½ cup mushrooms diced

1 garlic clove diced

4 strips of bacon diced

½ cup chicken stock
½ cup white wine

1 ½ lb. Meat mix(beef pork veal)

1 Large can ground peeled tomatos(15 oz)

1 tsp garlic salt

1 bay leaf

In a large sauce pot heat olive oil over medium high heat. Add in onions celery and carrots and garlic salt. Saute for 2-3 minutes. Add in bacon and mushrooms. Sauté another 3-4 minutes stirring frequently. Add in meat mix and cook until brown. Add in the wine, bay leaf, stock and tomatoes  bring to a boil. Then reduce heat and simmer for 1 hour. Serve over  pasta.
