Eat This! Green Bean casserole all grown up!

Growing up my mother would not allow us to eat sugar salt canned or frozen foods. So when” mommy dearest”  decided to leave all her babies (babies all being 21 years or older) and go back down to Florida we decided to start a new family tradition on Thanksgiving…we would make the infamous GREEN BEAN CASSEROLE  my mother’s own personal food nightmare!! This culinary delight is made entirely of canned foods and comes complete with more than half of your recommended sodium intake for the day!

My sister Jill and I would make it then we would take pictures of us all hovered around a big casserole of it all with spoons and open mouths and then we would send the pics to her with a card saying “Wish you were here!”.

Of course we thought this was hysterical until we would all get the “phone call “ then it was laughter so hard you could barely catch your breath and literally tears would be coming out of your eyes….This year Jill isn’t here so the joke just would not be the same. But now I am an admitted green bean casserole addict. This recipe came from a friend of mine down in GA. It is basically a fresher churched up version of the Thanksgiving classic that is elevated enough even for my mother’s approval. (but still just as bad for you) We will be replacing the canned veggies with fresh and we will be making a mushroom sherry cream cheese sauce to replace the canned soup. HOWEVER…in honor of my baby sister who is not here the French’s Fried Onions won’t be going anywhere!!! I hope you have a wonderful Thanksgiving with your families!

2 cups fresh green beans

2 tbsp butter

¼ cup diced onions

¼ cup sherry

3/4 cup cream cheese

1/4 cup chicken broth

1 cup diced mushrooms

Salt pepper

French’s Fried onions

1 tsp Fresh thyme(finely minced)

Pre heat oven to 350*.Over med high heat in a  sauté pan melt butter salt pepper and sauté onions and mushrooms for 1-3 minutes add the sherry chicken broth and  then the cream cheese . Stir until smooth and creamy. Remove from heat in a bowl toss the green  beans and ½ cup fried onions , thyme and the mushroom onion cream sauce until well coated and mixed. Then place in casserole dish put in oven and bake for 20 minutes then add the rest of the fried onions and bake for another 10 minutes and enjoy!
