EAT THIS! French Chicken and Sausage Cassoulet (only really really easy!!!)

A Cassoulet is a rustic, slow-cooked dish made with white beans and an assortment of meats, from duck confit or foie gras to sausages and succulent cuts of pork, lamb or poultry. This recipe we are using chicken and sausage but you can swap out for your favorite combinations of Fowl and Pork..  As someone who’s cooking esthetic is primarily French based , this is one of my most beloved dishes.

The problem  with Cassoulets is there are so many steps to preparing the dish that as a single working mom it’s unlikely I have time during the week or want  to give up my Sunday in bed watching Pride and Prejudice and Bridget Jones . So I wanted to put together a SLOW COOKER Cassoulet that would still yield that fabulous feel of an authentic Cassoulet. But all you do is literally throw all the ingredients into the crock pot and go watch your Lifetime and enjoy your Sunday!! This weekend is the start of some pretty crappy weather…PERFECT for staying at home with the family and watching movies or getting some projects done. I would recommend a nice loaf of crusty bread and some red wine to accompany the dish. Also…the secret is the SLOW COOKING so start this in the morning. Even though you could speed it up on high I find that the cassoulet tends to over cook at the higher tempreture. Cheers!

1 5lb chicken cut up

1 pound pork sausage or kielbasa sliced

¼ cup cooked bacon diced

1 bag dried mixed beans(about a one pound bag)

2 onions diced

2 mediums carrots sliced

2 celery stalks diced

3 cloves garlic diced

1 ¼ cup White Wine

1 14oz diced tomatoes

3 cups water

1 can beef broth

1 tbsp Herb De Provence (you can substitute with Bell’s seasoning)

1 dash ground cloves

Pepper and Garlic Salt to Taste

2 tbsp Butter

Put all the ingredients into the crock pot. Cover with spices and then the water and broth. Finally the butter. Set your crock pot for LOW cover and cook 6hours. Garnish with fresh parsley.
