EAT THIS! Kid's Edition- Homemade DONUTS

A kid friendly recipe perfect for a chilly Sunday morning activity or a great Friday night something to do!

This week is the start of a monthly series
that I would like to introduce…It’s called “Eat This- Kid’s Edition!” I think
that cooking can be a fun inexpensive way to get quality time with your
children and engage them in an educational and fun activity! It is also the
perfect vehicle for introducing your children to a variety of different foods
that they wouldn’t normally eat. I thought that I would start off with a fun
and easy recipe…. Donuts! Donuts are not known to be the healthiest of foods and
really aren’t anything new..but that’s why it is a great place to start . What
kid doesn’t love Donuts? And, good news, my recipe is a healthy version! The
donuts are baked and made with wheat flour . Each Donut works out to be about
140 calories and only 3 grams of fat!! Compare that to that of a regular donut
at 260 calories and 14 grams of fat!!!!


When my son Conrad was younger, once a week we
had something called “Junk  food night” (only
it was called something that started with an “s”). Where if he ate healthy all
week and did well in school he was allowed to pick any kind of food (fast food,
pizza, cake, mac and cheese etc.)  he
wanted. I always believed that you should never deprive your kids of certain
kinds of foods but let them have them in moderation. And except for the rare
trip to McDonalds ,we would actually prepare these foods together! When you do
that, it allows for you to control
and monitor what is going into your kids food even if it is of the “junk food”
variety. I feel it is more
rewarding to make the treats together then to just pick it up from the store
and let them mindlessly shovel the treats in their mouth!

One of my son’s favorite things to do was to
make donuts! We would always make a batch on nights when he had sleep overs.
The kids LOVED the idea of making donuts and really got into it! This recipe is
so inexpensive and is really really easy to make. I would recommend buying a donut
pan. (You can find them anywhere, like 
Walmart ,Target, I have even seen doughnut makers in CVS and Walgreens
just call around)The donut pans make it easy to bake and get that great donut
shape. If you don’t have a donut pan just fill a large ziplock freezer bag with
the batter and freeze for about a half hour until its firm and then cut a
corner off and squeeze the batter through the hole (this is called TUBING)onto
the cookie sheet. This weekend it looks like we are having wonderful weather so
if you are looking for a fun Friday night activity with the kids or a wonderful
FAMILY activity for Sunday morning this is a great way to start!I had a visit
from my buddy Jaiden this week and we had a blast making these! (*Tip-I took a paper grocery bag and used that to cover my table for the frosting process. Then just roll it up and throw it out when done!)  Please send in any photos you have of you and

Donuts

Nonstick
cooking spray

1 cup whole-wheat
flour

1 cup all-purpose
flour

1/2 cup sugar

1 1/2 teaspoons
baking powder

1/4 teaspoon ground
cinnamon

1/2 teaspoon salt

3/4 cup low-fat
buttermilk

2 large eggs

1/4 cup honey

2 tablespoons melted
butter

1 tablespoon vanilla
extract



Glaze

1/2 cup salted
butter

3 cups powdered sugar

2 1/4 teaspoons vanilla extract

7 tablespoons evaporated milk

*You
can also add some chopped strawberries or even some cocoa powder into the glaze
or if you really want to keep it light toss the warm donuts in cinnamon and
sugar!!

 

 

Directions

Preheat
oven to 425°. Lightly coat a pan with cooking spray.

Combine
flours, sugar, baking powder, cinnamon and 
salt in a large bowl, stirring well with a whisk.

In
a separate bowl combine the buttermilk, eggs, vanilla, butter, and honey. Stir
well. Combine both mixes and then whisk well.

Spoon
the batter into donut pans or tube onto a baking pan. Bake in middle of oven
for about 8 min.(until donuts spring back when touched and are golden on
bottom)  Let cool in pan for about 4
min.  Then move donuts onto separate
plate for toppings!!

In
bowl combine all ingredients for the glaze and then spoon onto each donut.
