EAT THIS! I can't take the heat..so I'm getting out of the kitchen!!

Grilled Italian bread brushed with olive oil and rosemary topped with creamy marscapone cheese orange marmalade and salty proscuitto


There is absolutely no way in hell I will be cooking this week!!!  It’s all about fruit salads and cold gazpacho!  For the show stopper an open faced grilled bread brushed with rosemary and olive oil and topped with
creamy marscapone cheese, orange marmalade and salty prosciutto!

When I was a child my mother had this idea that she was a little more European then she actually was… she spoke with a suspicious half New England half British
accent  and used to make little tea sandwiches for absolutely no reason or other then her delusions of living on the English countryside with her imaginary husband Mick Jagger… One of my favorites was  the ham , marmalade and butter with the little crusts cut off...(no tea in sight)... It was savory and sweet. One of my FAVORITE combinations!!

Now that I am older I still love that flavor profile. I’m replacing the ham with
prosciutto and the thinly sliced white bread with a nice rustic Italian loaf that
we are going to brush with some olive oils and rosemary and instead of  butter: a creamy dreamy mascarpone cheese!
This served alongside with a big salad and a crisp bottle of white wine and you
have a chic easy light dinner!

cents!! So you could literally make a beautiful fun light meal for 4 for under
ten bucks!

1jar orange marmalade

A few Sprigs rosemary

Olive oil

 

1 small container marscapone chees

¼ lb
thinly sliced prosciutto


Heat up the grill and slice the bread length wise. Brush with some olive
oil and fresh rosemary sprigs...grill till crispy with grill marks. Spread with
the marscapone cheese and then the marmalade layer the prosciutto on top and
you are done!... Another fantastic way to serve these sandwiches is for a
brunch. Make a nice fruit salad and a plate of grilled spicy red cherry peppers
and serve with some Prosecco.... Serve al fresco!! This is a very light
flavorful way to do open faced grilled sandwiches!
