EAT THIS! Gone Fishin'...(the only way to prepare freshly caught fish)

A simple way to prepare some fresh fish

 

It’s fishing season!!!!I absolutely love this time of year
when all my friends who fish start showing up at my door with that days
catch!!! NOTHING and I mean NOTHING compares to eating a fish just out of the
water!  You have not tasted the true
flavor of your favorite fish until you have had that fish prepared within hours
of it being caught. You literally need little or nothing as far as seasonings
etc . Just a little fat (olive oil or butter some salt and pepper)

Last night my neighbor Billy knocked on my door and with him he had bags of fresh Cod that he
had caught that day! He caught about 20 good sized fish and wanted to know if I
would be interested in taking some off his hands… (the same thing he asks me
every year around this time, followed by the same response I give him every
year which is YES!! A thousand times YES!)

So there I was with about six pounds of  beautiful pink fleshed cod and it was 8 at
night.  I washed the fish put in in an
air tight container along with ½ a bottle of prosecco and a few tablespoons of
Old Bay Seasoning. ( I have in the past found that if you can’t cook a freshly
caught fish right away a nice champagne bath overnight will preserve the
freshness. )

The next day I called my friend Michael and warned him of
the impending FISH FEST about to commence later that day and to be prepared. I
pre heated the oven and threw a couple of red potatoes covered in garlic salt
in the oven and then about 30 minutes later started to heat up the pan I would
be cooking the fish in.  I placed each
fillet skin down and topped with butter ,thyme, garlic salt and fresh pepper
then a little Cajun seasoning(just a kiss) .Let that cook all the way through
for about  10 min till the meat was
flakey and white.

1 part freshly caught fish

Garlic salt

old bay seasoning

Cajun pepper to taste

Butter

Fresh Thyme

Prosecco (you can use champagne or white wine  if you have some hanging around)

Wash the fish put into a conatiner and pour some prosecco and old bay over it . Allow the fish to sit in the wine bath  for about 30 min. Heat frying pan on med high. Add butter to the pan to melt. Sprinkle fish with cajun pepper garlic salt and some thyme. Cook each side for about 4-5 minutes until flesh is white firm but flakey.
