EAT THIS! Easter Boursin Potatoes!

Well it is finally starting to feel like spring! I think
that my stalker Winter has finally taken the hint and gone away! This weekend
most of us will be celebrating Easter with our family and friends. I thought
this week I would share a recipe that is a family tradition in my house. Every
Easter we bake our Ham in a bottle of white wine with onions, serve it with fresh asparagus(grilled with some orange
rind) and the absolute Easter MUST is my mother’s Boursin potatoes! The one year that we did not make these
because my mother wanted roasted potatoes was not a good year!! The men in the family
that look forward to these potatoes all year long showed their distain by
eating in the other room drinking a little more than usual and all coincidently
having to leave early because they all “weren’t feeling well” !The following
year requests and demand confirmations that she would be making the potatoes
started, NO JOKE, in December! Long story short... my
mother never made that mistake again.! These potatoes are extremely easy to
prepare and the pay off is big!! So if this year it’s your turn to bring a side
dish, I have you covered!…Or if you are
just looking to make this holiday meal extra special then this will surely do

3lbs Red potatoes
sliced thin

1 pint Heavy Cream
¼ stick butter

2 tbps Shallots finely diced
1 package Boursin cheese
Fresh ground Pepper
Pre heat the oven to 350*. In a sauce pan melt the butter.
Add the shallots sauté for 1 minute. Add the Cheese and stir till melted. Add
the heavy cream. Stir till creamy and mixed well. Remove from heat . In a
roasting pan layer the potatoes. Pour the cream cheese sauce over the potatoes
until well coated. Bake in the oven for one hour until top is a little browned.
Serve and enjoy!
