EAT THIS!!-Big Fat Greek Sandwich

Don’t know about you ,but I am so happy to be out of my
house!!! I had a lot of free time over the weekend to play around with some new
recipes. I am seriously over stews, chili, soup and casseroles of any kind! I
gained 7 pounds just being inside eating and drinking! So this week I really
want to eat light and keep it simple as possible. 

Today I am featuring a little taste of the Mediterranean. I
absolutely love Greek food. My aunt married into a Greek family and I learned
how to prepare traditional Greek fare at an early age. Greek food definitely
stands out. The ingredients are bold and distinctive. Garlic Onions Lemon Mint
Dill Oregano olive oil… but when combined the right way have a well
balanced  flavor. They all seem to
compliment each other and work to enhance the main ingredients.

I knew I definitely wanted to do some type of sandwich. I
was playing around with the idea of combining all the elements of Greek
dressing but making it into a spread to go on the bread in place of a
traditional mayonnaise .I  wanted to
incorporate the salty savory feta with light fresh lemon  ,tangy garlic and aromatic oregano. So I did!
And instead of putting those ingredients into olive oil for a dressing I
mixed  them with a little Olive-Oil MAYONAISE
 and created a “Greek dressing spread” . To
highlight the flavors and give the sandwich some some depth, I piled on some
peppery arugula and sliced Bermuda onions then served it over a toasted olive
and rosemary focaccia bread! I reached out to the Sandwich Master himself
Justin Matera to get his opinion . (Justin along with his brother owns The
Hungry Whale which will soon be the Longboard Café and Bar ..presently under
construction )Justin really liked the sandwich and gave me the thumbs up! He
enjoyed it so much so that he will feature his version of the sandwich as a
special along with the specialty sandwiches he is known for when the Long Board
Café open’s up in the spring! And because they will now offer an extensive beer
and wine selection may I recommend pairing it with a nice Spring Ale !! I will
keep everyone posted on the opening!

THE SANDWICH

Roast beef sliced rare

Arugula

Thin sliced Bermuda Onions

Olive and Rosemary Foccacia bread

1 tsp minced garlic

1tsp grated lemon rind

1 tbsp Lemon Juice

¼ cup Olive oil Mayonaise

½ cup crumbled Feta

1tsp fresh Oregano

Salt and pepper to taste

In a small bowl mix together mayo, feta , lemon rind, lemon
juice,oregano , salt and pepper. Toast the focaccia bread and then spread the
mayo mixture. Stack the roast beef , arugula and onions to taste. ENJOY!!****If
you can’t find an olive and focaccia bread then simply take some fresh rosemary
and little olive oil and some kalamata olives a pinch of salt and blend in a
food processor then brush over any nice crusty bread for the same flavor
profiles.

This sandwich looks and sounds amazing! I like all the flavors and it sounds like a nice change!I think my girlfriend and I are going to make the olive oil rosemary and olive spread instead of using the focaccia bread. I like the idea of two sides of flavors. I have eaten at the Hungry Whale, those guys are great and they know their sanwiches!! I am looking forward to the new place and being able to enjoy a nice cold beer with this sandwich! Perfect!

This is one tasty sandwich! We hope to be opening soon, but as with any new business there are always a ton of hurdles to jump over. We promise to offer some mighty tasty sandwiches as soon as we can! We also look forward to working with Jade (she has a great knowledge of food......especially sandwiches!) and utilizing some of her amazing sandwich ideas. Great article, I always look forward to her recipes here on Patch.

We hope to work with Jade on some of our menu items. Her ideas are clearly delicious and with her background in the culinary field, we would be lucky to have the opportunity to work with her. If you think this sandwich sounds delicious, wait till what we come up with when we open. It is alway great to work with local talented people when opening a business in such a small city. I have worked in Televison as a food stylist for years. Obviously being in this industry I know alot of resturant /club/ bar owners . I have consulted and helped develop alot of Menus in my day. It is something I actually love to do. I get to be creative and offer advice on what direction a resturant should go. Justin and his brother are well respected in this field and their mother is a very well known pastry chef and they have been extremely successful. I was excited when he asked if I would kick around some ideas with him . Great guy.When they open up in the spring you have to go!! Prime spot right on the water at Pickering wharf. Their lobster rolls are to die for!! Can't wait to see what they have in store food wise!! Thank you for your comments!! :)

Jade, we made this sandwich last night and it was amazing! TY! Anything Mediteranean I am a big fan, especially being part Greek!! lol I love Pickering wharf and can't wait to try the new Longboard! You're ideas and food inspirations are unlike no other. Simple, gourmet, always budget friendly, and eclectic. You are never boring! lol Look forward to more recipes and congrats on being part of new menu selections for the much anticipated local Longboard Cafe in Salem! I will spread the word!
